Sweet Potato Puree

- food processor
- ice cube trays
Ingredients
- 2 large sweet potatoes
Instructions
- Wash and peel sweet potatoes
- Fill large pot about half way with water and bring to boil
- Cut potatoes into large chunks (that will still fit into your processor)
- Boil sweet potatoes for about 15 minutes or until soft enough to mash
- Remove potatoes from water and allow to cool; save at least one cup of water as reserve
- Process potatoes until desired consistency; add reserve ⅛ cup at a time as needed
- Tranfer into trays
